Sticky Toffee and Salted Caramel

This has always been one of the most popular Cupcake flavours, and looks like topping the polls in the loafkins range as well. The sticky toffee sponge is packed full of dates – and the great news is I am in discussion with a Fairtrade supplier to use their rich, juicy Medjoul dates from Palestine – so the cakes will be even better and even better for the producers!

They are topped with a featherlight buttercream made from unsalted butter, icing sugar, caramel and a sprinkling of seasalt. Absolutely divine – seriously, it may slice into four but couldn’t you eat them all yourself?!
