Hummingbird
The Hummingbird never really worked for me as a cupcake. It’s moist, juicy batter full of bananas and pineapple tended to be too much for a cupcake wrapper to cope with!
It lends itself perfectly to a loafkin however. Who out there hasn’t been desperate to have a Hummingbird cake all to themselves?!
Along with the fresh fruit there’s a healthy dose of Fairtrade walnuts, cinnamon and vanilla. Packed full of flavour and finished with cream cheese frosting it’s almost everyone’s favourite – could you share yours?!
