Carrot, Coconut and Orange

This little loafkin is a new member of the family – more recently seen as a large round carrot cake. The recipe has been adapted over a period of time, originally containing lime juice and walnuts but more recently orange and coconut. Who’s to say the original won’t find its way into the loafkin range one day though?

The buttercream is the ever popular vanilla variety with the addition of fresh orange rind. Irresistible – wouldn’t you want a whole one to yourself?!
